What is going on with celiac disease and the gluten free diet?

I was diagnosed with celiac disease 6 years ago and have been gluten free ever since. At that point in time I had never heard of celiac disease, and neither had anyone I know. Gluten free products were scarce and not very good. Restaurants had no idea what I was talking about. Even my doctor didn’t know much about celiac disease or the gluten free diet.

Since then, everything has changed. Now it seems like everyone knows about celiac disease, knows someone with celiac disease, or thinks they have celiac disease. Restaurants have gluten free menus. Even General Mills is making gluten free baking mixes and chex mix! It’s literally everywhere I look.

All of this is great for me! and I’m not complaining, but I just wonder…..why? What happened to bring celiac disease to the public consciousness in the last few years?

My wife is a nurse and she told me about a study that examined blood samples from the 40s or 50s and it found that the celiac rate was significantly lower than it is now. So it isn’t just more awareness but something going on. Maybe more processed foods, plastics or maybe the strains of wheat in use now are more conducive to triggering the reaction.

I have been gluten free for 7 years and every year has gotten easier as far as finding gluten free menus and products.
