A Pu-erh Primer
Pu-erh (or Pu’er) tea is a unique Chinese tea produces from a very ancient, broad-leafed variety of the tea plant Camellia sinensis. The tea is grown in the mountainous Yunnan province and produced by a unique traditional method that involves aging and curing for much longer than any other tea, resulting in a unique flavor profile.
Although all Pu’er begins as raw green tea leaves (called sheng), it is oxidized and cured to a red or brown hue in one of two ways. The traditional way involves aging the tea, which has been condensed into small or large flat discs or cakes, for long periods of time. Pu’ers are kept for two, ten, or even up to fifty years as they very slowly and gracefully take on complex flavors and aromas that range from sweet to woodsy. Rare versions of this kind of Pu’er can be very expensive and are highly sought by tea connoisseurs and collectors.
Cooked Pu-erh (called shu), on the other hand, is usually found in loose-leaf form. Cooking the tea is a way to try to achieve the traditional Pu-erh flavors without the time and patience required for the traditional aging process. While there are some fine cooked Pu-erhs available, in general they do not match the complexity of the aged varieties.
Pu-erh tea dates back to the Han dynasty of the third century B.C. The best teas of the harvest each year were pressed into precious caked, wrapped in silk, and presented to the royalty as gifts. Local governors, upon receiving these tributes, would send them by horseback on long journeys to the royal court. The legend has it that the tea was found to improve in taste during the long voyages to the emperor, often of a year or more.
To make Pu-erh tea, break apart a Pu-erh cake or disc (tuo cha) to obtain the amount of tea you need for brewing. Oftentimes it is also necessary to further break up the densely packed layers of tea from this small chunk; afterwards, brew the tea as you would any other. Pu-erh teas can be re-steeped several times to make many pots of tea as long as the leaves are not allowed to dry out. As Pu-erh has a unique flavor, experiment with steeping times to get mild extractions at first. Pu-erh teas also offer the antioxidants and other health benefits of other teas, and are a unique, delicious, and healthy form of this ancient beverage.
